‘Nuglia di Castelsaraceno

In the picturesque landscape of the Lucanian Apennines Val d’Agri Lagonegrese National Park, amidst woods, villages and timeless traditions, a rare and surprising product is preserved: the ‘Nuglia di Castelsaraceno. More than just a simple sausage, it is an authentic testament to Lucanian rural culture, a food that speaks of ingenuity, necessity and respect for the raw ingredients.

The ‘Nuglia’ actually originated as a ‘by-product’, an expression of the philosophy of wasting nothing from the pig. In the past, in rural households, every part of the animal was put to good use: it is precisely from this need that this speciality takes shape, prepared with less prized cuts, fat and trimmings, skilfully processed and transformed into something unique.
The mixture, with its soft, spreadable consistency, is flavoured with simple yet robust ingredients: salt, crushed red pepper and chilli, which give ‘Nuglia its characteristic deep red colour and a lively, slightly spicy flavour. After being stuffed into casings, the curing period is short, just long enough for the flavours to blend without losing its typical creaminess.
What makes ‘Nuglia truly special is how it is enjoyed. It is not sliced like a traditional cured meat, but is mainly eaten warm, spread on slices of toasted bread: the heat enhances its softness and releases intense aromas, transforming it into a true sensory experience. It is also ideal as an ingredient in cooking, to enrich rustic sauces or add character to traditional local dishes.
Savouring it in the authentic setting of the Lucanian Apennines Park means embarking on a complete journey: nature, culture and gastronomy merge into a single experience. Here, amongst trails and small towns steeped in history, ‘Nuglia becomes an ambassador for a region that has managed to preserve and celebrate its roots and has been awarded the Traditional Agri-Food Product (PAT) designation by the Basilicata Region.
A product humble in its origins but extraordinary in taste, which today represents one of the most genuine expressions of the most authentic Basilicata.
